Cheese Tortellini with Spinach and Blue Cheese Sauce

This is a recipe that has been a big hit in my family, including for the kids. Yes, little kids eating spinach!

I’ve “stolen” this recipe from Trine, who hosts one of Norway’s biggest food blogs. If you understand the language, you should definitely check out her website.

  • 250 grams fresh tortellini or ravioli (filled with cheese)
  • ca 200 grams spinach (fresh or frozen)
  • 50 ml cream
  • 100 grams blue cheese
  • 150 grams crème fraîche
  • black pepper (and perhaps a little salt)

Prepare the tortellini/ravioli according to what it says on the package and let the water run off in a colander.

Spread the spinach in the bottom of an ovenproof dish. If you’re using frozen spinach, you have to defrost it first and pour out the water. Spread the cooked pasta over the spinach.

Bring the creme to a boil, add the blue cheese and keep stirring until the cheese has melted. Add the crème fraîche, stir and add salt and pepper according to your tastes. Pour the sauce over the spinach and pasta.

Cook in the oven at 225°C for 15-20 minutes.
